Grilled Chicken and Mashed Potatoes
We haven't been grocery shopping for non-wedding food for two weeks now, so we're trying to use up stuff in the freezer and pantry. Sunday was my night to cook. (The potatoes were left over from the wedding weekend -- I had planned to make potato salad one night, but since we had so much food, I didn't.) I seasoned the chicken with Penzey's Bicentennial Rub on the George Forman grill, and served it with mashed potatoes. Not the best dinner ever.
