Chicken quesadilla and spiced rice
Michael's night to cook. Again since we haven't gone grocery shopping since the wedding, we're been relying on what's in our freezer and pantry. So it's been a challenge. No sour cream with dinner (even though I love it with quesadillas) because, according to Michael, what was remaining in the refrigerator was a little too sour. Michael added some diced jalapenos to the chicken and it kicked up the flavor profile a little bit. The cheese was cheddar, leftover from the wedding.
